Ingredients

    Kraft Rancher’s Choice Dressing

  • 2

    cup

    mixed baby greens

  • 1

    cup

    sweet potato, peeled and cubed

  • 1

    cup

    cherry tomatoes, halved

  • 1

    cup

    frozen corn

  • 12

    crushed tortilla chips

  • 1/3

    cup

    cotija or feta cheese, crumbled

  • 1

    jalapeño, sliced

  • ½

    cup

    fresh coriander leaves

  • 2

    tbsp

    Tajín spice

  • 2

    tbsp

    vegetable oil (for roasting)


Instructions

  1. Step 1

    In a bowl, toss sweet potatoes with 1 ½ tbsp vegetable oil and 1 tbsp Tajín spice. Air fry at 400°F for 10-15 minutes, or until sweet potatoes are fully cooked. Remove from air fryer basket and place on a plate to cool.

  2. Step 2

    Rapidly thaw corn by submerging in a bowl of water for a few minutes. Drain, pat dry and toss corn with remaining oil and air fry for 2-3 minutes, or until golden brown.

  3. Step 3

    Mix Kraft Ranchers Choice dressing with remaining Tajín spice. Place all the ingredients in a bowl, toss with dressing, and serve

    Tips:

    *Use local fresh corn when available: roast and remove kernels from the cob.

    *Canned corn (strained) can substitute frozen corn.
