    tbsp

    extra virgin olive oil, divided

  • 6

    bone-in pork chops (2 lb./900 g), 3/4 inch thick

  • 1

    large onion, chopped

  • 1

    cup

    chopped fennel

  • 1/4

    cup

    25%-less-sodium chicken broth

  • 1

    jar

(650 mL) Classico Riserva Roasted Garlic Pasta Sauce

  • 1/4

    cup

    water

  • 2

    tbsp

    chopped fresh parsley

Instructions

  1. Step 1

Heat 2 Tbsp. oil in large nonstick skillet on medium-high heat. Add chops; cook 2 to 3 min. on each side or until evenly browned on both sides. Transfer chops to plate; cover to keep warm.

  2. Step 2

Add remaining oil to skillet along with the onions and fennel; cook and stir on medium heat 3 min. or until onions are softened and lightly browned. Add chicken broth; cook 2 to 3 min. or until heated through, stirring constantly to scrape browned bits from bottom of skillet. Stir in pasta sauce.

  3. Step 3

Pour water into empty pasta sauce jar; cover and shake well. Add to ingredients in skillet; stir. Bring to boil, stirring frequently. Return chops to skillet; cover. Simmer on medium-low heat 50 min. to 1 hour or until chops are done (160°F).

  4. Step 4

    Sprinkle with parsley.
