Panzanella Salad Bowl with Herb-Marinated Chicken

Ingredients

1/4 cup

Pure J.L. KRAFT Classic Italian Dressing & Marinade add more for drizzling

1/2 cup

Pure J.L. KRAFT Thyme, Basil & Parsley Dressing & Marinade

2 

chicken breast x 142g

3 

vine-ripened tomatoes, sliced into wedges

1/2 

cucumber, sliced

½ cup

thinly sliced red onion

3 cup

focaccia bread, cubed

basil leaves

Instructions

Step 1

Preheat oven to 350°F.

Step 2

Marinate chicken breast in Thyme, Basil & Parsley Dressing & Marinade for 20 minutes.

Step 3

Mix focaccia bread with a few good glugs of olive oil and season with salt. Place on a baking tray and bake until crispy.

Step 4

Remove chicken breast from marinade, pat dry, and season with salt and pepper. Cook on a preheated cast iron griddle or BBQ for 10-12 minutes or until done.

Step 5

Toss cucumbers, red onions, tomatoes, and focaccia croutons with Classic Italian Dressing & Marinade.Transfer to serving vessels and garnish with basil leaves. Top with grilled chicken and drizzle with Classic Italian Dressing & Marinade.
