One-Pot Vegetable Biryani

Ingredients

tbsp oil or butter

tsp each garlic paste and ginger paste

tsp biryani masala or garam masala

cups mixed vegetables, diced small, fresh or frozen (carrots, peas, green beans, cauliflower and/or potatoes)

cups basmati rice (rinsed)

cups water or vegetable broth
salt to taste.

Instructions
Step 1
In a pot over medium heat, add oil or butter. Sauté garlic and ginger paste for 1 minute.
Step 2
Add masala and vegetables, saute for an additional 3-4 minutes.
Step 3
Stir in Classico Tomato & Basil Pasta Sauce and simmer for 5 minutes.
Step 4
Add rice and water. Bring to a boil. Cover and reduce heat. Cook for 12-15 minutes until rice is tender and liquid is absorbed.
Step 5
Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork, and garnish before serving.
Optional: Garnish with fried onions, cilantro, mint.
