Hawaiian pineapple chicken


Ingredients

    Heinz tomato ketchup

  • 1/3

    cup

    Soy sauce

  • 1/4

    cup

    Brown sugar

  • 2

    tbsp

    Rice wine vinegar

  • 2

    tsp

    Each freshly grated ginger & garlic

  • 1

    tsp

    Chilli flakes, optional

  • 1

    Lebanese cucumber, roughly chopped

  • 1

    Green jalapeno chilli, deseeded & chopped

  • 1/4

    cup

    Chopped coriander leaves

  • 3

    Spring onions, chopped

    Juice of 1 lime, extra lime wedges for serving juice of 1 lime, extra lime wedges for serving


Instructions

  1. Step 1

    Preheat oven to 180°C / 160°C fan-forced.

  2. Step 2

    Pour the Golden Circle pineapple juice into a mixing bowl with the marinade ingredients. Place the pineapple pieces in a salad bowl with the salsa ingredients and mix well. Refrigerate the salsa until ready to use.

  3. Step 3

    Pour the marinade over the chicken in a deep roasting tray. Bake 45 minutes, then grill for 5 minutes to caramelise the chicken on top. Serve with pineapple salsa.
