Instructions
Step 1
Combine dry pudding mix, flour and baking powder; set aside.
Step 2
Microwave bittersweet chocolate and butter in large microwaveable bowl on HIGH 2 min., stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended.
Step 3
Add brown sugar; mix well. Add eggs, 1 at a time, mixing well after each addition. Stir in vanilla. Add pudding mixture; mix well.
Step 4
Refrigerate 30 min. or until dough is firm enough to easily handle.
Step 5
Heat oven to 350°F. Shape dough into 34 balls, using about 1 Tbsp. dough for each ball.
Step 6
Roll balls, one at a time, in powdered sugar until each ball is evenly coated on all sides with sugar.
Step 7
Place, 2 inches apart, on parchment-covered baking sheets.
Step 8
Bake 12 to 14 min. or until centers of cookies are set. Cool 1 min. on baking sheets. Transfer cookies to wire racks; cool completely.
Note: A level measuring tablespoon of dough will give you evenly sized 1-inch balls. If the dough becomes sticky, return dough to refrigerator to chill until firm before continuing to roll remaining dough into balls.
