Summer Corn Salad


Ingredients

    Wattie's® Corn Whole Kernel 410g

  • 4

    large

    Tomatoes, diced

  • 1

    Red onion, diced

  • 1

    Cucumber, diced

  • 1

    Avocado, diced

  • 1/4

    cup

    Fresh basil, finely chopped

  • 1/4

    cup

    Coriander, finely chopped

  • 2

    Spring onions, finely chopped

    Feta, crumbled

    Lemon or lime, juiced

  • 2 Tbsp

    Olive oil

    Serve with corn chips for a starter or as a side salad


Instructions

  1. Step 1

    In a large bowl, combine corn, tomatoes, red onion, cucumber, avocado, basil, coriander, and spring onions.

  2. Step 2

    Add crumbled feta on top.

  3. Step 3

    In a small bowl, whisk together lemon or lime juice, olive oil, salt, and pepper.

  4. Step 4

    Drizzle the dressing over the salad and toss gently.

  5. Step 5

    Serve with corn chips as a starter or side.
