Al Pastor tacos are arguably Mexico City’s most trendy taco, known for their sweet, smoky flavour (as they are typically grilled on an open flame). Ours brings in the smoky heat of guajillo chillies and sweetness of pineapple. Top with salsa verde (made with green tomatoes and chillies) for a fresh kick.

    Las Chicas salsa verde

    Taco tortillas

    Pork loin or plant-based substitute

  • 1/2

    Small pineapple

  • 1

    Small onion

  • -

    Chopped coriander

  • 1-2

    Olive oil


Instructions

  1. Step 1

    Slice your pork or plant-based substitute into strips and mix with 50g of Las Chicas Al Pastor Cooking Paste - leave to marinate for at least 30 minutes, (overnight is even better!). Chop some coriander, dice a small onion, and set these aside for later. SLOW ROAST PORK

  2. Step 2

    Preheat your grill to medium-high heat. Slice your pineapple, brush lightly with olive oil then place on a baking tray and cook under the grill for 3-4 minutes, until the pineapple is slightly charred and has grill marks.

  3. Step 3

    Add 1-2 tbsp of oil to a pan and heat. Fry the marinated pork for approximately 5 minutes, until it's cooked through. Heat your tortillas in a separate dry pan, or wrap in foil and heat gently in the oven. CHECK LC BOX FOR PAN HEAT

  4. Step 4

    Add a spoonful of pork to each taco tortilla, top with your grilled pineapple, diced onion, coriander, and some Las Chicas Salsa Verde, then enjoy!
