Ingredients

    (500 mL) peeled sweet potato cubes (1/2 inch)

    (250 mL) water

    (370 g) TACO BELL CRUNCHY & SOFT TACO Taco Cravings Kit

  • 1

    can

    (13 oz./398 mL) black beans, rinsed and drained

  • 1

    cup

    (250 mL) frozen corn


Instructions

  1. Step 1

    Heat oven to 300 F (150 C).

  2. Step 2

    Combine potatoes, water and Taco Seasoning Mix in medium skillet.  Bring to boil on medium-high heat.  Reduce heat to medium-low; simmer 4 to 5 min. or until potatoes are tender, stirring occasionally. Add beans and corn; mix well.  Cook 3 to 5 min. or until heated through, stirring frequently.

  3. Step 3

    Meanwhile, place Taco Shells in single layer on baking sheet.  Bake 3 to 5 min. or just until warmed. 

  4. Step 4

    Stack tortillas on microwaveable plate. Cover with moistened paper towel. Microwave on HIGH 30 sec.

  5. Step 5

    Spoon half the potato mixture evenly down centers of tortillas; roll up.  Fill Taco Shells with remaining potato mixture. 

    TIP:

    Serving Suggestion:  Add your favourite taco toppings, such as sour cream, shredded lettuce, chopped tomatoes and/or shredded cheddar cheese.
