  1. Step 1

    With the rack in the highest position, preheat the oven to broil.

  2. Step 2

    In a bowl, place the feta and cover with cold water. Let it soak for 10 minutes to reduce the salt. Drain and pat dry.

  3. Step 3

    In a baking dish or lightly oiled cast iron skillet, place the block of feta. Drizzle with 2 tbsp (30 ml) of the dressing. Season with pepper.

  4. Step 4

    Broil for 5 minutes or until the cheese is slightly golden. Remove from the heat. Reduce the oven temperature to 400°F (200°C).

  5. Step 5

    Pour the remaining dressing around the cheese. Place the onion, almonds, and olives in the dressing. Bake for 5 minutes or until the cheese is hot and softened. Sprinkle with parsley and serve with toasted ciabatta.

    Note

    To serve as a salad, place the cheese over a bed of baby spinach and drizzle with the hot dressing.
