Courgette and Peri-Peri Beanz Slice


Ingredients

    Wattie’s Beanz® Peri-Peri Flavour 300g

  • 2

    cups

    Grated courgette (approx. 2 courgettes)

  • 1

    Onion, finely diced

  • 1 1/4

    cups

    Grated cheddar cheese

  • 1

    cup

    Self-raising flour

  • 4

    Eggs, lightly beaten

  • 3 Tbsp

    Oil


Instructions

  1. Step 1

    Preheat oven to 180°C (fan forced) and grease and line a 16x16cm slice pan with baking paper, making sure to leave an overhang on each long edge.

  2. Step 2

    Squeeze grated courgette of excess liquid with hands or by wrapping it in a clean tea towel and wringing until no more water comes out.

  3. Step 3

    Strain Wattie’s Beanz Peri-Peri Flavour over a bowl in a fine mesh strainer. Reserve sauce and set aside.

  4. Step 4

    Combine courgette, onion, cheese and flour in a large mixing bowl. Make a well in the centre and add eggs, oil and salt. Fold gently until thoroughly mixed. Stir through the drained Wattie’s Beanz Peri-Peri Flavour. Spoon into prepared pan. Bake 35-40 minutes or until cooked through and golden brown on top.

  5. Step 5

    Cool courgette slice in pan and cut into squares. Serve drizzled with reserved sauce.
