Ingredients

    pavlova (pre-made)

  • 300

    ml

    cream

  • 1/2

    tsp

    vanilla essence

  • 1

    tin

    Wattie's® Peaches Sliced in Clear Fruit Juice 410g

  • 3

    tbsp

    lemon curd

  • 1/2

    cup

    almonds

  • 1

    tbsp

    brown sugar

  • 20

    butter

  • 3

    tbsp

    passion fruit drizzle

  • Mint for garnish


Instructions

  1. Step 1

    Place a pan over a medium heat and add butter. Once melted, add brown sugar and almonds. Keep stirring until the nuts start to caramelise. Pour the nuts onto a lined tray to cool. Once cooled, roughly chop the nuts and set aside.

  2. Step 2

    Grab a large bowl and add cream and vanilla essence. Whip until you reach firm peaks. Spread lemon curd over the pavlova, top with cream. Strain the peaches and then place the peaches on top of the cream, followed by passion fruit drizzle, caramelised nuts and fresh mint.
