Ingredients

2 medium

Sized capsicums

1 Tbsp 

Olive oil

1 

White onion, diced

2 

Garlic cloves, finely diced

Wattie's® Chilli Beans Hot

1 cup

Of grated carrots

1 tsp

Chilli powder

Salt and pepper to taste

1 cup

Parmesan cheese

Eggs

Coriander or parsley, to serve

- 

Wattie's® Tomato Sauce, to serve


Instructions

Step 1

Preheat oven to 175°C.

Step 2

Cut the capsicums in half lengthways and remove the seeds. Set the capsicums aside.

Step 3

In a pan, heat the olive oil over medium heat. Add the onion and cook until they are soft and slightly brown, about 5 minutes. Add the garlic and cook for an additional minute.

Step 4

Stir in the Wattie's Chilli Beans Hot, carrots, chilli powder, pepper and salt. Remove from heat and stir in ¾ cup of parmesan cheese.

Stuff each prepared capsicum with the bean mixture and place on a baking tray. Crack an egg on top of each capsicum half and sprinkle the remaining cheese on top.

Step 5

Cook the stuffed capsicums in the oven for 5-10 minutes or until egg whites are set. Garnish with parsley or coriander and serve with tomato sauce. Enjoy!
