Peach and Vanilla Blender Cake with Flaked Almonds
Ingredients
- - - Wattie's® Peaches Sliced in Clear Fruit Juice 410g 
- 187 - g - cup Self-raising flour 
- 1 - tsp - Baking soda 
- 1/4 - tsp - Table salt 
- 150 - g - Caster sugar 
- 125 - g - Butter, softened 
- 2 - large - Eggs 
- 1/2 - cup - Whole milk 
- 2 - tsp - Vanilla extract 
- 1/2 - cup - Flaked almond pieces 
- - - Clear fruit juice (from tin) 
- _________ - TO SERVE 
- - - Greek yoghurt 
- - - Reduced peach syrup from can 
- - - Flaked almond pieces 
Instructions
- Step 1 - Drain the Wattie's Peaches, reserving the juice. Set the peaches aside. 
- Step 2 - In a blender, combine the flour, baking soda, salt, sugar, butter, eggs, milk, and vanilla extract. Blend until smooth. 
- Step 3 - Pour all of the batter into a greased baking dish. Arrange the peaches on top (or underneath) the batter, depending on preference. Sprinkle flaked almonds over the top. 
- Step 4 - Prep reduced syrup. As the cake cooks, reduce the syrup in a pan over a medium heat until thick and saucy. 
- Step 5 - Bake at 180°C for 35-40 minutes or until a skewer inserted into the centre comes out clean. - Cool: Allow to cool before slicing and serving. Pour over reserved syrup and add a dollop of Greek yoghurt to serve. - Recipe by @nourishandtempt
