Orange sticky soy chickpeas


Ingredients

    Cans Wattie's chickpeas in springwater

  • 1

    tsp

    Vegetable oil

  • 3

    Garlic cloves

  • 1/3

    cup

    Soy sauce

  • 1/2

    Orange

  • 2

    tsp

    Rice vinegar

  • 2

    tbsp

    Brown sugar

  • 1

    Cube vegetable stock

  • 2

    tbsp

    Corn starch

  • 1

    tsp

    Black pepper

  • 1

    tbsp

    Sesame seeds

  • 1

    Broccoli

  • 1

    cup

    Rice


Instructions

  1. Step 1

    Mince the garlic and fry for a few minutes in vegetable or olive oil.

  2. Step 2

    To the same pan, add in soy sauce, rice vinegar, brown sugar & a stock cube

  3. Step 3

    Wash and zest the skin of 1 orange and set aside.

  4. Step 4

    Juice that same orange, add juice to the pan and stir.

  5. Step 5

    Create a cornstarch slurry by mixing 2 tbsp of cornstarch with 4 tbsp of hot water, add to the pan and stir.

  6. Step 6

    Drain and rinse chickpeas and add to the pan.

  7. Step 7

    Cook for 15 minutes adding hot water to keep the pan from sticking

  8. Step 8

    Serve on rice with steamed broccoli, topped with sesame seeds and orange zest.
