Breakfast Hash Brown Muffin Cups
Ingredients
- 6 - Wattie's® Classic Hash Browns 
- 1 - tin - Wattie's® Beanz™ Baked Beans in Tomato Sauce 420g 
- 5 - slices - Streaky bacon, chopped 
- 1 - cup - Grated cheese 
- 25 - ml - Milk 
- 5 - Eggs 
- 1 Tbsp - Fresh parsley, chopped 
- - - Salt and pepper 
Instructions
- Step 1 - Preheat oven to 200°C (or 210°C if using oven in step 2). Spray a muffin tin with oil. 
- Step 2 - Cook the Wattie's Classic Hash Browns in an air fryer at 180°C for 10-15 minutes or bake at 210°C for 15 minutes, turning halfway through. 
- Step 3 - Cook or air fry bacon until crispy, then chop into small pieces. 
- Step 4 - In a bowl, whisk together the eggs, milk, salt, and pepper. 
- Step 5 - Once the hash browns are cooked, break them up and press a portion into the base of each muffin cup to form a crust. 
- Step 6 - Spoon Wattie's Beanz Baked Beans in Tomato Sauce over each hash brown crust, add a layer of bacon, and pour in the egg mixture. 
- Step 7 - Sprinkle with cheese and garnish with parsley, and season with black pepper.
