Easy Beanzy Fritters


Ingredients

    Wattie's® Beanz™ Peri-Peri Flavour

  • 1/3

    cup

    Frozen or canned corn kernels

  • 1/2

    Red capsicum, finely diced

  • 1/2

    cups

    Onion, finely chopped

  • 1/2

    cup

    Self-raising flour

  • 3

    Eggs, beaten

  • 1/4

    cup

    Mayonnaise

Instructions

  1. Step 1

    Strain Wattie’s Beanz Peri-Peri Flavour through a fine mesh strainer. Transfer to a large mixing bowl and add corn, capsicum, onion, flour and eggs and mix well.

  2. Step 2

    Heat a non-stick frying pan over medium heat. Spray pan with cooking spray. Using a 1⁄4-cup measure, spoon out mixture into the hot pan, and spread out to form a 9 cm circle and cook fritters in batches.

  3. Step 3

    Cook for 2-3 minutes. Flip over and cook for a further 1-2 minutes or until golden and cooked through. Transfer to a lined baking tray and partially cover with foil Place in a warmed (100°C oven) to keep warm as you cook remaining mixture.

  4. Step 4

    Combine mayonnaise with reserved Wattie's Beanz sauce. Serve fritters topped with extra Wattie's Beanz, rocket and a dollop of mayonnaise.
